Minted Veggie Dip
Makes: 8 servings


  • 1 1/4 c Plain nonfat yogurt
  • 3/4 c Light sour cream
  • 3 cloves Garlic, minced
  • 1 Cucumber, peeled, seeded, and chopped
  • 1 T Mint (fresh), chopped
  • Salt and pepper to taste
  • 8 c Assorted raw vegetables (jicama or yambean, celery, broccoli, carrots, etc.) cut into sticks or flowerettes

Preparation Instructions

Put all ingredients into food processor or blender and process until well combined. Chill. Serve with raw vegetables such as carrot & celery sticks, radishes, jicama.
