Red Onion Potato Salad
Makes: 6 servings


  • 6 Potatoes (medium), peeled, cooked, and sliced
  • 1 c Celery, sliced
  • 1 c Red onion, thinly sliced
  • 1/3 c Parsley, chopped
  • 1/4 c Low calorie Italian dressing
  • 3 T Wine vinegar
  • 1/2 t Salt
  • Dash cayenne pepper

Preparation Instructions

In large bowl, combine hot potatoes with remaining ingredients. Refrigerate to chill. Marinating hot potatoes in dressing while they chill brings out full flavor with less dressing. Makes 6 servings.
