Mexican Vegetables
Makes: 4 servings

Ingredients

  • 1 c cucumber, chopped with peel
  • 1 can (8 3/4 oz) corn, low sodium, drained
  • 1 can (16 oz) tomatoes, stewed, low sodium
  • 2 T red wine vinegar
  • 1/4 t cilantro, dried
  • 2 T red pepper, chopped
  • 1/2 t garlic
  • 2 T green pepper, chopped
  • 1/2 t cumin
  • 1/8 t pepper, ground

Preparation Instructions

Combine all ingredients in large serving bowl. Mix well. Serve cold.
